Truffles are balls of ganache, dipped in chocolate, then coated with anything that complements that flavor and silky-smooth texture. Coatings can be desiccated coconut, ground nuts like pistachios or hazelnuts, cocoa nibs , Pailleté feuilletine wafers etc.
These truffles are fully artisan, with the ganache made of the finest couverture chocolate.
